I attempted to make bread rolls tonight following ‘against all grain’ recipe: link here
I halved the recipe and used dairy milk instead of almond milk.
I used cashew butter with almond butter (roughly half/half) as I did not have whole nuts and I prefer almonds to cashew. I used about 1 cup of nut butter instead of 1.5cups of whole nuts.
I used 1/8 cup of arrowroot and 1/4 cup of coconut flour.
I didn’t have english muffin tins so I used a standard muffin tin and as well as greasing the tins, I used strips of baking paper in them to be able to pull them out. I had some mixture left over so made a mini bread loaf as well. In fact I could have made 10 easily out of this mixture. Definitely leave some room at the top of the mould, I filled mine too full!
The texture is light and fluffy and quite bread like. Taste is savoury and not sweet like breads I have made before. I will definitely make these again.
We had a couple of slices with grass fed butte, organic Bolognese and green beans for dinner.
