I had my first attempt at making bacon today.

I bought some organic pork belly for about £5. I followed the process shown in this post at paleoleap. I didn’t add any of the herbs, just salted it and I left it in my fridge about 9 days.

The result is a bit salty but it still tastes pretty good. Next time I will use a little less salt but I was worried it would go off so I overdid a bit…

I wish I had seen this post on rendering lard before I had finished.  I cut the skin off and gave it to my dogs! I also cut a good portion of the fat off and then searched how to make lard. Sadly i will miss out on the skin ‘pop’ but the lardons are still looking pretty good and I have a small amount of lard too.
