Yes! Healthy chocolate ice cream!! How is this possible? Well with a lovely ingredient called avocado. Now I know that sounds like it won’t taste good but believe me you will not taste the avocado in this ice cream, just a delicious creamy texture and chocolate flavour!
It’s so simple you can make it in an afternoon and it will be ready for evening time. Or, like me, you could keep some out and have it as a chocolate mousse with some berries because you couldn’t wait until it froze to eat it!
This recipe is Primal, Paleo, Gluten free, Dairy Free, Vegan Friendly and you could leave the nuts out if you have a nut allergy. It is full of healthy fats, some protein and is only sweetened by the banana.
What you need:
- I used a stick blender but you could try using a food processor.
- One avocado
- One ripe medium banana
- 1-2TBS of almond butter – you could replace this with 1 TBS of almond oil or melted coconut oil
- 2-5tsp of organic unsweetened cocoa powder – this is a personal preference and depends on the strength of the powder
- 1-2 eps maple syrup (optional)
Start with 2tsp of cocoa powder. Peel the avocado and banana and blend along with all the other ingredients until well mixed. Once all is mixed have a taste and see if you need to add more cocoa powder. Keep adding cocoa powder until you are happy with the chocolateyness! If you need more sweetness, add maple syrup to taste.
Transfer to a pot that you can freeze. Save some back to eat immediately with some berries. This is one recipe where the bowl being licked clean is obligatory!
