Since making bone broth I have got back into making soup. The flavour of the month is broccoli and stilton (or any organic blue cheese on offer).

Once you have made the broth it is really simple,

Heat the broth up and add in the broccoli. I make enough for two people so use about 2 cups of broth and about 6-8 good sized florets of broccoli. Depending on how thick your broth is, you may want to add more. Once the broccoli is cooked, add some stilton. Depending on how strong you like the taste this could vary from 50-200gm.

Then whiz it all through with a handheld blender. If it is a bit runny, add some potato starch flour to thicken. Sprinkle a bit in at a time and whizz. Adding potato starch flour adds some resistant starch which feeds our good bacteria – added bonus!

Add salt and pepper to taste, serve and enjoy!
