Ingredients:

  • 4 bananas
  • 4 free range eggs
  • 1/2 Cup almond butter, unsalted
  • 4 Tbs ghee or butter (you could substitute coconut oil)
  • 1/2 Cup coconut flour
  • 1 Tbs cinnamon (I use Ceylon cinnamon)
  • 1 Tsp baking soda
  • 1 Tsp baking powder
  • 1 Tsp vanilla
  • 1/8 Tsp sea salt
  • Optional 1/4 Cup dark chocolate bar (85% Green & Blacks), chopped

Preparation:

  • Preheat oven to 350°F
  • Combine bananas, eggs, almond butter, and ghee (or butter or coconut oil) and mix thoroughly; then blend with a stick blender
  • Add coconut flour, cinnamon, baking soda, baking powder, vanilla, sea salt, and chopped chocolate; mix well
  • Grease a 9×5 glass or metal loaf pan with coconut oil
  • Pour in batter, and place in oven
  • Bake about 55 minutes in glass or 40 minutes in metal (until a toothpick inserted into the center comes out clean)
  • Remove from oven and remove (I usually flip it out as soon as I can)
  • Slice and serve (or slice it and then freeze it for later)
